There are various image ratings that can be increased by different methods. You can see them under "Reports" in the "Sales Book" 
Yes, you can build specialist marques, just continue building the type of cars you want to specialize in. Your image rating in those fields should increase. Conversely if you ran something like a Ford, you can make a new Marque owned by Ford and stick all your super cars under that marque.
