As for discontinuing parts/vehicles made by a company, you can now do this in the Marque section in the stock menu. I don't have the game in front of me right now, but it's in there.
Also I believe another way to stop selling everywhere is simply set the price to zero then apply to all.
(Although I might be wrong on this one and getting it confused with production.)
